Seasonality:

Green cabbage is a compact, dense, well-rounded vegetable. Its dense-leaved head protects the bud at the heart of the cabbage. Its leaves have veins that give it texture and volume. Green cabbage is also known as savoy cabbage. It is best when cooked, but it can also be eaten raw, sliced in a salad, for example.

Green cabbage has been cultivated for several thousand years. It is one of the oldest vegetables of the kitchen garden. Less sensitive to cold than other vegetables, it is in season throughout the winter. However, like all other brassica varieties, savoy cabbage is frost sensitive and likes to spend the winter in the mild and humid climate of the Breton coastland.

Cultivating organic green cabbage

Green cabbage is the ultimate winter vegetable. It is planted in the ground from May onwards. It is harvested by hand from July to April and is in full season from November to March. The cabbages are cut and packed directly in the field by the market gardeners. This technique limits the handling of the vegetables and ensures their freshness and quality.
