Seasonality:
The organic Camus artichoke is now one of the most widely grown varieties in Brittany. This very resistant vegetable has a round, full shape. It can also be identified by its grey-green foliage. When cooked, it has a refined taste and a soft heart.
The temperate and humid climate in Brittany, and the exceptional richness of our soils, allow us to offer you the Camus artichoke from May to November. The peak season for this vegetable is from June to October.
Cultivating the organic Camus artichoke
Artichokes are cultivated entirely by hand. They are harvested individually when ripe. This means than producers have to visit the fields multiple times to cut all the heads that are ready to be eaten. Each hectare of organic Camus artichoke cultivated requires 250–300 hours of work. In comparison, cereal production requires only eight hours or, in other words, thirty-seven times less!
A plant remains in the ground for three years. The plots are weeded mechanically. The vegetables are refrigerated on the day of harvest to ensure optimal quality. However, producers agree that artichokes are best when eaten a few days after harvesting. To ensure their freshness, the artichokes should be stored in a cool, dark and damp place.

Pouliquen works exclusively with Prince de Bretagne producers. Organic Camus artichokes are supplied by 151 certified organic producers that work with the SICA (Finistère) and Les Maraîchers d’Armor (Côtes d’Armor) cooperatives. All their farms are located less than 20 km from the sea, in an area where frost is extremely rare.
