Shiitake Mushrooms

Shiitake mushrooms, also known as oak fungus, are the second most cultivated mushroom in the world. Shiitake mushrooms have a reddish-brown cap with white fibrous strands. The gills are tightly arranged and white or cream in colour. They have a solid white cylindrical stem. They may have a fleshy ring. Shiitake mushrooms have a very fragrant flavour. 
Shiitake mushrooms are recognised for their medicinal properties.

The species originated in Asia and is widely consumed in Japan and China, but it is now also very popular in Europe. Apart from traditional Asian cuisine, it is most often cooked like white button mushrooms, sautéed in a wok to accompany meat and poultry dishes.

Cultivating the shiitake mushroom

Shiitake mushrooms are cultivated on a French-made substrate of straw, oak sawdust and water.
A substrate produces mushrooms for six to eight weeks, before being renewed with a new substrate. This technique makes it possible to produce shiitake mushrooms all year round.

Our producers

The eight Prince de Bretagne producers working with the Pouliquen Group to market shiitake mushrooms have been cultivating them since 1988. This mushroom thrives in our humid, temperate region. The expertise of our market gardeners does the rest.

The market gardeners producing shiitake mushrooms are located in North Finistère and are members of the SICA agricultural cooperative.
