Seasonality:
The shiitake is a very fragrant mushroom. It originates from Asia and is the second most cultivated mushroom in the world. It has only been grown in Brittany since the late 1980s and has only been available organically since 2019.
Shiitake mushrooms have a reddish-brown cap with white fibrous strands. The gills are tightly arranged and white or cream in colour. They have a solid white cylindrical stem. The organic shiitake mushroom has soft flesh and a texture similar to the porcini or cep mushroom.
Apart from traditional Asian cuisine, the shiitake is most often cooked like white button mushrooms, sautéed in a wok to accompany meat and poultry dishes.
Cultivating organic shiitake mushrooms
Organic shiitake mushrooms are grown in a French-made substrate of straw, oak sawdust and water. All the materials used in the substrate meet the specifications for organic farming. A substrate produces mushrooms for six to eight weeks. It is then renewed with a new substrate. This cultivation method makes it possible to produce shiitake all year round.
Organic shiitake mushrooms are grown in sheds or tunnels, protected from light and wind. This mushroom thrives in cool, moist environments. It has also become perfectly acclimated to the weather in Brittany. Growing shiitake is a painstaking process that requires patience and a lot of experience. Harvesting, grading and packing are done by hand.
Our organic producers
The shiitake mushroom has only been available organically since 2019. One of our producers managed to obtain quality organic mushrooms with a worthwhile yield. Other producers will probably try to convert to organic in the near future. The method of production does not change from conventional cultivation. Only the substrate is different and is made up of material from organic crops. This development is proof of the innovation of Prince de Bretagne producers. All the fresh vegetables in Pouliquen’s organic range are certified organic and Global GAP.
